Egg + Smoked Salmon Toast

This open-face sandwich makes a great meal or snack morning, noon, or night!

Nutritious, elegant and simple breakfast toast elevated to perfection......


Breakfast and brunch season is in full, official swing. Ultimate smoked salmon and avocado toast paired with scrambled eggs is a match made in heaven. You can start with a piece of toasted sprouted whole grain bread (or any bread of your choice) then layer the bread with a quick smear of creamy avocado spread (made by mashing one avocado and mixing with salt, pepper, paprika, lemon juice), spicy micro greens, soft scrambled eggs, sockeye smoked salmon. Then add a sprinkle of sea salt and pepper on top for added flavor.


It's simple, yet impeccably delicious! The avocado makes a great replacement to cream cheese in this toast since it's thick and creamy. The avocado works as a healthier, thick and creamy base paired with the rich and bold flavors of the smoked salmon!


Ingredients

Avocado Spread

- 1 ripe avocado

- juice of 1/2 lemon

- salt + pepper to taste

- 1/4 tsp paprika

- 1/4 tsp onion powder

- 1 clove of garlic minced


Toast

- slices of sprouted whole grain bread, toasted*

- sockeye smoked salmon

- handful of spicy micro greens

- soft scrambled eggs

- salt + pepper to taste
